The classic chef's knife, made in the tradition of Japan's greatest blade-making city. NAGOMI's Chef Knife carries the long, curved blade profile of the Western chef's knife, reinterpreted through the precision and material standards of Seki craftsmanship. Comfortable for rocking cuts, slicing, and detailed work in equal measure.
The unpainted Spanish laminated wood handle is finished entirely by hand, with rivets polished flush so that nothing interrupts the grip. Light enough for extended use, weighted precisely enough to feel deliberate.
Made to be easy to maintain.
NAGOMI uses a single-layer steel construction — meaning the entire blade sharpens evenly and consistently, with no special technique or prior experience required. About 20 strokes on newspaper once or twice a month is enough to keep the edge performing. For anyone building confidence in the kitchen, this makes a meaningful difference.
Designed to protect your hand.
Where the blade meets the handle, NAGOMI incorporates a gentle inward curve at the bolster. This detail keeps the fingers naturally clear of the blade during extended cutting, reducing fatigue and the risk of accidental slips. A small design choice that makes daily cooking noticeably more comfortable. The seamless, rivet-flush handle removes any gap between the hand and the blade, no interruption, just control.
Care: Wipe dry after use. Sharpen with newspaper to maintain edge. Hand wash only.

Story
Seki City has been producing blades since the Kamakura period, over 700 years of accumulated knowledge in steel, edge geometry, and finishing. NAGOMI brings that heritage to a form familiar to cooks around the world: the chef's knife. What makes it distinctly Japanese is not the shape, but the standard, the double-step sharpening process, the hand-finished handle, the inspection before it leaves the workshop.
